We are the only bean-to-bar chocolate factory in Cyprus. Our Brand and Makers: Craft and Elite Chocolate

Have you ever asked yourself, what is the difference between craft chocolate and fine chocolate?

The word craft is used to refer to the amount of production: all of these are small, hand-produced chocolates using “the real Belgian chocolate”, bars of industrial chocolate that are merely melted down and poured into strange moulds then sprinkled with nuts. Originally, craft chocolate implied complete-cycle artisanal manufacturing by itself, but eventually, real masters renamed the term bean-to-bar wherein the buyer can instantly discern that he or she is purchasing chocolate that was made in a single location using entire cocoa beans under the authority of one manufacturer.

“Fine chocolate” means the genetics of cocoa beans. It is rather common to use are Fino de Aroma beans in the production of fine chocolate. Fino de Aroma includes thousands varieties of cacao beans with authentic flavour profiles despite taking only 5% of the market.

Our trips to the plantations are important because the most exquisite chocolate is made from small batch fine cacao, which is grown on small family-owned cacao plantations. To bring out the real taste of special beans, it needs special experience in the production, fermentation, drying, and conching of cacao. These experts are referred to as chocolate makers and not chocolatiers, who design/develop flavours. We are a premium chocolate company and we have chocolate makers and chocolatiers and this enables us to make collections that appeal to all tastes.

Fermentation and drying are the most complicated processes, and on the plantations, they influence the quality and richness of the future chocolate flavour to a large extent. We have applied the high standards to the whole process of production: we hand-sort the cocoa beans, pulverize them, grind them and conch them, regulating the temperature and taste.

We use whole cocoa beans, instead of a cheap powder. No cocoa butter substitutes, no chemicals, no artificial colours! We do not only want to make something tasty, but we want to demonstrate to you the entire palette of the flavours of nature contained in high quality raw materials.
