In the world of fine cocoa, a geographic designation is a mark of origin—defined by where the alchemy of transformation occurs. To create true Cyprus Chocolate, we sourced cocoa beans from 18 select plantations and transform the finest Fino de Aroma beans into a unique product. This is a complex, temperamental, yet exhilarating process. Every batch of beans that arrives has its own character—from the citrus notes of Madagascar and the woody-rum profile of authentic Cuba to the mystical energy of Peru. Our task is to reveal the natural flavour of the cocoa beans with the utmost care, drawing on more than 20 years of experience.

Inside the Factory Shop and Production Process

The soul of Cyprus Chocolates is our boutique chocolate factory shop. It is more than a point of sale; it is a portal into a world of genuine taste. Here, the air is saturated with the aroma of cocoa beans—a scent that is impossible to mistake for anything else. Within this space, you do not simply taste and purchase; you become a patron of the craft. This is where two worlds converge: the technical realm of expertise and the world of emotional impulses and conscious consumption. A portion of our production was born from our customers' "wants," "dreams," and the things you "could not find elsewhere". You are the first to taste our new recipes, while we listen and refine until we achieve the perfect balance. While the chocolate factory shop is the soul, the heart of our work is the workshop, where the true alchemy occurs.

The journey of our chocolate begins with the manual sorting of cocoa beans, carefully selected during our travels. We examine every bean by hand, analysing it visually, tactilely, and by scent—a sensory ritual that ensures only the extraordinary remains. From every sack, thirty beans are chosen for laboratory testing to verify the quality of fermentation and drying. Following this, we crush the beans and winnow them to remove the husks. The resulting cocoa nibs are refined for several days in mills with granite rollers. This is a highly responsible production stage involving precise temperature control and frequent sampling.

Crucially, we refine these beans into a product of pure integrity—never relying on industrially defatted powder, which ensures that every bar retains its natural, aromatic cocoa butter. Then comes prolonged conching, which allows the chocolate to "breathe," oxygenating the mass to remove excess bitterness and acidity, thereby revealing the full flavour palette. Only at the final stage do we move to tempering, moulding, and packaging—each step requiring absolute concentration. Notably, you can experience this stage yourself during our masterclass. Bean-to-bar production is demanding—not merely because of the technology, but due to the high level of expertise required from our makers. This skill is attained only through experience and a seasoned palate—developed by tasting countless cocoa beans at various stages of readiness. Only decades of practice allow us to select the best beans and produce the real chocolate. The role of the chocolatier is equally rigorous; one must sense the temperature of the chocolate and understand its readiness by its viscosity. It is a profoundly creative vocation—forming something new, combining the unexpected. It requires both courage and meticulousness. We are a team young in spirit, devoted to our craft and dedicated to making chocolate to the highest quality standard.

Apart from its fascinating sights, Pano Platres also prides itself in its rich history (early mentions tracing it back to 12th century AD). Furthermore, Platres is famous for the praise it received by the Nobel-winning poet Giorgos Seferis, whose lines have become a motto for the village: In Platres, the nightingales will not let you sleep.
